We set out the layout so the pattern centres on the range or hood, and so cuts at the ends of a run are balanced rather than leaving a sliver in a corner. Where the backsplash meets upper cabinets and the counter, the line stays straight and the reveal stays consistent.

Yes. Backsplashes are installed against existing counters routinely. We protect the counter surface throughout and finish with a flexible sealant at the joint rather than grout, because that joint needs to move.
Porcelain and ceramic handle heat and clean easily. Natural stone and unglazed materials are more porous and will stain from cooking oils unless properly sealed and maintained. Full-height slab is the easiest of all to keep clean since there are almost no joints.
